BANANA NUT LOAF BREAD 
2 c. all purpose flour
2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1/2 c. shortening
1/2 c. sugar
1 tsp. shredded finely orange rind
2 ripe bananas, cut up
2 tbsp. milk
1/2 c. chopped pecan or walnuts

Lightly grease 9 x 5 x 3 inch pan. In mixing bowl stir together flour, baking powder, salt, soda. Set aside.

In a small bowl cream together: shortening and sugar until light and fluffy. Add eggs and orange peel. Beat well.

In another bowl mash bananas with fork. Should have about a cup. Stir in milk. Add flour mixture and banana mixture alternately to creamed mixture. Beat until smooth after each addition.

Fold in nuts. Pour batter in pan. Bake at 350 degrees for 45 to 50 minutes. Turn out and cool on wire rack.
