PETITE CHERRY CHEESECAKES 
2 (8 oz.) cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
Cherry pie filling

Beat cream cheese, sugar, eggs, lemon juice and vanilla with electric mixer until light and fluffy. Line small muffin pans with baking cups. Place vanilla wafers in bottom. Fill 2/3 full with cheese mixture. Bake at 375 degrees for 15 minutes or just until set. Top each with pie filling and chill. Makes 48-50.
