BAKED SQUASH AU GRATIN 
4 sm. yellow squash
1 med. onion
1/4 c. bread crumbs
1 c. cheese, shredded
Salt & pepper

Boil squash until soft; let cool. Split down the middle lengthwise and scoop out pulp. Mix pulp, diced onion, bread crumbs, cheese, salt and pepper. Scoop mixture back into squash shells. Bake until cheese is melted and bubbly at 350 degrees.
