POPOVERS THAT ALWAYS WORK | |
Don't overbeat! Don't cheat! (Measure carefully!) Don't peek! (Don't open oven door!) 1 1/4 c. flour 1/2 tsp. salt 1 1/4 c. milk 3 lg. eggs Mix flour, salt. Add milk and beat with a wire whisk until just blended (don't overbeat). Add one egg at a time, gently beating each in. Pour batter into well greased muffin tins, about 1/2 full. Bake at 425 degrees for 20 minutes, then reduce heat to 325 degrees and bake another 10-15 minutes until golden brown. Butter and serve immediately. (Can be cooked with a beef roast at low temperature but comes out more like Yorkshire Pudding.) Makes about 10 popovers. |
