BERRY OAT BRAN MUFFINS 
1 1/4 c. flour
2 tsp. baking powder
1 c. oatbran
1/2 c. sugar
2 eggs, beaten
3/4 c. skim milk
2 tbsp. applesauce
1 c. berries

Sift flour and baking powder into bowl. Add oatbran and sugar. Stir well to combine. In separate bowl, beat eggs and milk. Pour into dry ingredients. Stir only briefly. Add applesauce and berries and stir briefly again. Do not overwork. Lumps of flour will show. Fill greased muffin cups nearly to the top.

Bake 20 minutes at 425 degrees. Makes 12 small muffins.
