PUMPKIN BARS 
1 can (3 1/2 oz.) coconut
1 c. graham cracker crumbs
1 c. chopped walnuts
1/4 c. butter, melted
2 c. pumpkin, cooked & mashed
1 can (14 oz.) sweetened condensed milk
2 eggs
2 tsp. pumpkin pie spice
1/2 tsp. salt

Combine coconut, graham cracker crumbs, nuts and butter. Mix well. Pat 2/3 into an ungreased 13 x 9 inch pan. Combine remaining ingredients, stirring well. Spoon evenly over crust in pan. Sprinkle with remaining coconut mixture. Bake at 375 degrees for 30 to 35 minutes or until knife inserted in center comes out clean. Cool in pan then chill. Cut into 2 to 3 inch bars. Yield: 2 dozen.
