SPINACH PIE 
2 (10 oz.) pkgs. chopped spinach
1/2 c. bread crumbs soaked in milk
3 eggs
Sm. c. grated cheese
2 tbsp. butter
Salt
Pepper

Clean the spinach well and separate the leaves from the stems, boiling them in plenty of water to which a little salt has been added; then drain through a strainer, and cut into fine pieces, squeezing until the juice is well out, then add 1/2 cup of bread crumbs which have been soaked in milk.

Beat slightly 3 eggs and mix with a small cup of grated cheese, 2 tablespoons of butter and seasoned with salt and pepper to taste. Place the mixture in pie tin 2 or 3 inches deep, greased with butter, the bottom of which has been covered with dough, for the upper crust; then place the dough for the upper crust on the top (the mixture nearly filling the tin). Bake 45 minutes when it is ready to be served. May be eaten hot or cold. Bake at 350 degrees. Bacon bits can be added for tangy taste.
