CHEAP & EASY CHICKEN CASSEROLE 
1 Roll of Ritz Crackers
4 tbsp. butter
1 8 oz. tub of sour cream
1 8 oz. can of Cream of Chicken Soup
4 boneless skinless chicken breasts
1 pack shredded Cheddar Cheese

Preheat oven to 350°F.

In a large pot, boil the chicken until cooked all the way through.

While the chicken is boiling, in a medium bowl, combine the 8 ounces of sour cream and the cream of chicken soup. Mix thoroughly. Put the mixture in the bottom of a small casserole dish.

After the chicken is done, cut into bite-size pieces. Then place on top of the sour cream and chicken soup mixture. Add shredded cheddar cheese on top of the chicken (to your liking).

Crush the Ritz crackers and cover the dish. Dot the butter over the top of the dish.

Bake in the oven for 25-30 minutes.

I make a casserole very similar to this one I use chicken, French onion dip, cream of chicken soup, peas, water chestnuts, and every now and then potato chips and cover the top with cheese and put it in the oven for a while your recipe sounds delicious also and I'm thinking about making it tonight for dinner

I have not tried the "Cheap and Easy Chicken Casserole" yet, but it sounds delicious and I plan to real soon. I just wanted to suggest that this would be a great way to fix leftover turkey too.

THIS RECIPE IS GREAT! I added some veggies, cooked yellow rice and broken up tots. I put some of the sauce on the bottom and a lot on the top. Half cooked some biscuits and then placed them on top and put in over..... leave it to me to make easy less easy -.- lol. thank you for the basis of a GREAT DISH!

Prepared tonight. Served over egg noodles. Added some Mrs Dash garlic and herb on top of chicken and used Colby Monterey jack cheese because thar is what I had. Very yummy!

My husband and I really LOVED this recipe! I didn't have Ritz crackers, so I used 0.75 of a sleeve of Keebler Club crackers. I also used a regular 10.5 oz. can of cream of chicken soup. Some people have commented the soup mixture is bland. I disagree, because you get a bite of crispy crackers with every bite. I made this in a 8x8-inch Pyrex dish. We ate the whole thing! That doesn't usually happen. I will definitely make this again!

OK, not meaning to be rude just wanting to give my honest review of this recipe. was very excited by all the wonderful reviews I decided to prepare it just as written. My husband nor I cared much for it. We felt it tasted very bland. My grandson said it reminded him of tuna helper but he would rather have the tuna helper. If I were to try it again, I do not know what I could add to make it taste better. I am sorry, Heather H. I do not mean to offend; I am just giving my opinion.
