CHEAP & EASY CHICKEN CASSEROLE 
1 Roll of Ritz Crackers
4 tbsp. butter
1 8 oz. tub of sour cream
1 8 oz. can of Cream of Chicken Soup
4 boneless skinless chicken breasts
1 pack shredded Cheddar Cheese

Preheat oven to 350°F.

In a large pot, boil the chicken until cooked all the way through.

While the chicken is boiling, in a medium bowl, combine the 8 ounces of sour cream and the cream of chicken soup. Mix thoroughly. Put the mixture in the bottom of a small casserole dish.

After the chicken is done, cut into bite-size pieces. Then place on top of the sour cream and chicken soup mixture. Add shredded cheddar cheese on top of the chicken (to your liking).

Crush the Ritz crackers and cover the dish. Dot the butter over the top of the dish.

Bake in the oven for 25-30 minutes.

Super simple and tasty recipe!!! My boys and I absolutely loved it!!! I was a little short on time, so instead of boiling chicken breast, I just used a rotisserie chicken I bought at my local super market :-)

Delicious. We add lots of vegetables to the dish - nothing particular, just a variety of colour and of what is in the fridge. And, of course, a good amount of dijon mustard to the sour cream and soup mixture.

I gave this recipe five stars because with just some minor modifications you can make it even more awesome! First, you need a crust. Take two cups of FRENCH'S Cheddar French Fried Onions and spread evenly on the bottom of the dish. Next, I have found that the sour cream and soup is a bit bland. This is easily remedied by also mixing in two cans of Libby%u2019s potted meat food product, which also adds to the texture. Finally, I have found that the cheddar cheese leaves gaps and can get a bit oily. To fix that, and make a truly delightful casserole, just substitute the cheddar with ½ inch slices of Velveeta. You may need to cut some slices in half or shape the corners to cover every delicious bite, but trust me; the extra effort is worth it!

Very easy and tasty indeed. This would be really great with some veggies added, corn or broccoli. My daughter was skeptical at first (as are most 4-year-olds), but loved every bite. Definitely making this one again soon!

This was a very simple and yummy recipe! I was looking for something to do with some leftover chicken and found this after looking for almost an hour. So happy I found this new family favorite! Would also be good over some spaghetti noodles,or part of a twice baked potato.
