RACK OF LAMB 
1 rack of lamb
1 tsp. rosemary
1 tsp. salt
1 tbsp. brandy
1 tsp. minced garlic
1/2 tsp. pepper

Have butcher crack bone end of rack to facilitate carving. Preheat oven to 500 degree. Combine last 5 ingredients and rub on rack of lamb. Trim off excess fat. Bake on rack in roasting pan about 30 minutes or until desired doneness. Remove from oven. Let sit 5 minutes and carve. Serves 2 to 4.
