HUNGARIAN POTATO SOUP | |
3 c. diced potatoes 1 c. diced celery 1/2 c. chopped onion 1/2 c. diced pimento (if desired) Salt and pepper to taste 2 tbsp. flour 2 c. water 4 tsp. butter 4 c. milk 1 tbsp. minced parsley Combine potatoes, celery, onion, pimento, salt, pepper and water. Cook very slowly until potatoes are tender. Blend flour and butter; add hot milk gradually, stirring constantly. Add potatoes and cook 5 minutes longer. |
