MUSHROOM/CHEESE CANAPES | |
1 loaf party sliced bread (rye or pumpernickel) 2 tbsp. butter 1 tbsp. finely chopped onions 1/2 lb + finely chopped mushrooms 8 oz. cream cheese Remainder of stick of butter Salt - pepper to taste Saute butter (2 tablespoons), onion and mushrooms seasoned to taste. Add cream cheese, stir until smooth. Toast bread slightly - in oven - one side only. Soften remaining butter and use it to spread on untoasted side of bread. Spread each slice - buttered untoasted side - with mixture (about 1 teaspoon). Freeze if not using immediately. To serve: Broil about 4 minutes or until puffy/bubbly. |
