HUMMINGBIRD CAKE 
CAKE:

3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 1/2 c. salad oil
1 tsp. vanilla
8 oz. can crushed pineapple
1 c. chopped nuts
2 c. mashed bananas

Combine in a large bowl flour, sugar, salt and cinnamon; add eggs and oil, stir until all is moistened. Do not beat. Add vanilla, pineapple, nuts and bananas.

Spoon batter into 3 well greased and floured cake pans. Bake at 350 degrees for 25-30 minutes. Cool in pans. Remove and cool completely. Spread frosting between layers and on top and sides.

FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter
1 tsp. vanilla
1 lb. powdered sugar

Beat cream cheese and butter until creamy. Add sugar. Beat until light and fluffy. Add vanilla and stir.
