BEEF SOUP 
1 1/2 lbs. chuck
1 marrow soup bone
3 stalks celery
6 sprigs parsley
1 onion
4 carrots
Salt and pepper to taste
Potatoes
3 qts. water
1 fresh tomato or canned

Wash meat and bone. Place in kettle, add 3 quarts water. Bring to boil and skim top. Simmer slowly for 2 hours. Add all vegetables except potatoes. Cook for 1/2 hour. Add whole potatoes, cooking until potatoes are tender, approximately 20 minutes. Meanwhile boil noodles in salted water and drain. Pour strained soup over noodles and serve.
