HOPPING JOHN PEAS 
4 slices bacon, chopped
1/2 c. chopped onion
1/2 c. rice
1 (20 oz.) can black eyed peas
1 c. water

Cook bacon in skillet until crisp. Add onion, rice, peas, and water. Simmer, covered until rice is tender. Yield: 8 servings.
