NORWEGIAN POTATO LEFSE 
4 c. potatoes, peeled, boiled, riced
1 stick butter
1/2 tsp. salt
2 tsp. sugar
2 c. flour

Let potato mixture cool (at least room temperature) before adding flour. Roll 1/4 cup ball of mixture into thin, round sheet, rolling from the middle out to the edges. (Use a grooved rolling pin!) Makes 12-14 sheets.
