APPLE CAKE 
CAKE INGREDIENTS:

2 lg. eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 c. flour
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
4 c. raw apples, peeled & grated

FROSTING:

1 (3 oz.) pkg. cream cheese
3 tbsp. butter, melted
1 tbsp. vanilla
1 1/2 c. powdered sugar

Beat eggs and oil until foamy. Add sugar, vanilla, flour, cinnamon, soda, and salt and mix well. Stir in apples. Bake at 350 degrees for 1 hour in a greased and floured loaf or tube pan. Remove from pan. Cool and frost. Mix all frosting ingredients together and spread over cool cake.

Cake is very moist and improves with several days aging.
