BLUEBERRIES IN MAPLE CREAM 
3 c. fresh blueberries, rinsed and drained
1/2 c. pure maple syrup
1 c. whipping cream
Mint sprigs for garnish

Put blueberries into large bowl. Stir in maple syrup. Refrigerate, covered, at least 1 hour, stirring occasionally. Just before serving, whip cream just until very soft peaks form (chantilly stage).

Stir blueberry mixture well. Gently fold cream into blueberry mixture. Serve in stemmed glasses, garnished with mint sprigs. Serves 6-8.
