MOIST OAT BRAN MUFFINS 
2 c. oat bran cereal
1 c. skim milk
1/4 c. brown sugar, packed
1/2 c. applesauce
1/2 tsp. cinnamon
2 tbsp. honey
2 tsp. baking powder
2 tbsp. oil
2 egg whites, slightly beaten

Combine dry ingredients. Add milk, applesauce, egg whites, honey and oil. Mix just until dry ingredients are moistened. Fill muffin cups 2/3 full and cook in microwave on high for 2 to 2 1/2 minutes. Makes 12.

Since microwave ovens vary in power, you may need to adjust your cooking time.
