PERFECT PIE PASTRY 
4 c. all-purpose flour
4 tbsp. sugar
2 tsp. salt
1 3/4 c. shortening
1/2 c. water
1 tbsp. vinegar
1 egg

Combine flour, sugar and salt in large bowl. Add shortening. Mix well with 2 knives until crumbly. May be mixed in food processor. In small bowl, beat together water, vinegar and egg. Combine the two mixtures, stirring with a fork until all ingredients are moistened. Divide dough into 5 portions. Shape each portion into flat round patty with hands. Wrap each in plastic wrap and chill at least 1 hour before rolling out. May also freeze wrapped dough patty at this point for later use. (Yield: 5 pie crust.)

(To avoid sogginess on bottom pie crust, prick with a fork and brush with egg white.)
