LO-CAL POTATO SALAD 
3 lbs. new potatoes, well scrubbed
1 to 1 1/2 tbsp. caraway seeds
1 clove garlic

Cook the above in water to cover just until tender. Drain and cool. Slice or cube.

DRESSING:

1 tbsp. fresh lemon juice
1/3 c. low fat buttermilk
1/2 c. low fat cottage cheese
1/2 c. low cal mayonnaise

Garnish:

2 tbsp. dried dill weed, black pepper, lettuce and tomato wedges

Toss potatoes with dressing. Mound on lettuce leaves. Garnish. Serves 6.
