FLOUNDER FLORENTINE 
1 (10 oz.) box frozen chopped spinach, thawed and squeezed dry
1 lb. flounder fillets (or other fillets)
1/4 c. sour cream
1/3 c. mayonnaise
4 oz. water chestnuts, thinly sliced
1/4 lb. mushrooms, sauteed (optional)
2 tbsp. sherry
Salt and pepper to taste

Spread spinach in baking dish. Place fish on top and scatter the water chestnuts over this. Mix sour cream, mayonnaise, mushrooms, sherry and seasonings. Pour over fish. Bake in 350 degree oven for 35-45 minutes. Serve at once.
