ALFREDO SAUCE 
1/2 stick butter
3/4 c. light cream
1 egg yolk
1/4 c. ricotta cheese
1/2 c. Parmesan cheese
Parsley

Melt butter and add cream, heat and add egg yolk. Whip until it comes to a low boil. Add ricotta and Parmesan cheeses and continue to whip until it thickens. Use a sprinkle of parsley for color. Serve over your favorite pasta. Serves 2.
