JO LO'S GINGER CHICKEN 
2 lb. chicken breasts (boneless preferred)
2 tbsp. minced fresh ginger
5 stalks minced green onions
1/4 c. oil
Salt to taste

Bring pot of water to boil. Place chicken in boiling water and take pot off burner. Cover and let stand 1 hour. Remove chicken from water.

Combine remaining ingredients, then rub all over the chicken. Refrigerate until cold. Remove from refrigerator 1/2 hour before serving. Chop and serve on lettuce. Serves 6 to 8.
