MANDARIN SPINACH SALAD 
Torn fresh spinach leaves
Several Mandarin orange sections in each salad bowl
Sprinkle with toasted slivered almonds

DRESSING:

1/2 c. light salad oil (such as Puritan)
1/2 c. tarragon vinegar
2 tbsp. honey
1/4 c. frozen orange juice concentrate
1/2 tsp. poppy seeds
Few sprigs of tarragon out of the vinegar
20 cracked peppercorns (white, if available) (1/4 tsp.)

Combine ingredients in shaker jar and shake until well blended. Pour over salad as desired.
