APPLE SQUARES 
2 1/2 c. flour
1 tsp. salt
1 tbsp. sugar
1 c. Crisco
1 egg yolk
1/2 c. milk

Mix together flour, salt, sugar; cut in Crisco. Mix together egg yolk and milk; add to flour mixture. Stir well; chill dough in refrigerator.

FOR FILLING:

8 c. sliced apples
1 1/2 c. sugar
1/2 c. brown sugar
1 tsp. nutmeg
1 tsp. cinnamon
2 tbsp. lemon juice
2 tbsp. minute tapioca or flour
1 egg white
Cinnamon and sugar to sprinkle over top or 2 c. confectioners' sugar thinned
with 2 tbsp. lemon juice

Peel and slice 8 cups (3 pounds) apples. Steam or poach them until just tender. Combine apples with 1 1/2 cups sugar, 1/2 cup brown sugar, nutmeg, cinnamon, lemon juice and tapioca or flour.

Roll chilled dough into 2 parts, one larger than the other, to fit 10 x 15 inch baking pan, bottom and sides; the smaller one to fit top.

Put bottom filling in place in pan; spread apple filling into bottom crust, cover with top crust. Pinch edges together and cut several slits in top. Brush with beaten egg white and sprinkle sugar and cinnamon over top OR frost after baking. Bake in 400 degrees oven for 45 to 60 minutes. Keep watch so it doesn't scorch!

Remove from oven when done -- cool slightly and if desired, spread with glaze made from 2 cups confectioners' sugar thinned with lemon juice. Serves 20.
