PEACH COBBLER 
2 cans shortcake peaches (or 1 lg. can)
2 tbsp. cornstarch
1 stick butter
1 c. flour
1 c. sugar
Dash of salt
1 1/2 tsp. baking powder
3/4 c. milk

Cook peaches and cornstarch to thicken. Set aside. Melt butter in 8 x 8 inch pan. Mix ingredients for batter. (I just melt this in the pan I bake it in.) Pour in the cooked peaches, and pour batter on top of peaches. Bake at 350 degrees for 30 to 40 minutes, or until the batter is golden brown and edges pull away from the pan. Very good served warm with ice cream. You may use any fruit that you like for this recipe. This is Jim's favorite recipe.
