COWBOY CORNBREAD 
2 lbs. hamburger
1 onion, chopped
2 c. corn meal
4 eggs
2 c. milk
1 tsp. baking soda
1 1/2 tsp. salt
Grated cheese
Jalapeno peppers (optional)
1 can cream style corn

Brown hamburger with onion; drain. While hamburger is cooking, mix corn meal, eggs, milk, soda and salt. Add corn and one cup grated cheese. Heat two tablespoons of oil with a little corn meal in 12 inch cast iron skillet. Pour in half of the corn meal mixture, then hamburger, grated cheese and the rest of the corn meal mixture. Bake at 350 degrees for about 50 minutes. Serves 8.
