PINEAPPLE PIMIENTO CHEESE SALAD 
1 env. unflavored gelatin
3/4 c. cold water
1/2 c. sugar
1 sm. can crushed pineapple
3 tbsp. lemon juice
1 c. whipping cream
1 glass pimiento cheese spread
1/2 c. finely chopped almonds or walnuts
1 (11 oz.) can mandarin orange slices

Add gelatin to water. Drain pineapple; add sugar to syrup and simmer 5 minutes. Add lemon and gelatin, stir until dissolved. Blend in cheese. Chill until partially set. Stir in pineapple, nuts and oranges. Fold in whipped cream and put in 9"x9" pan. Chill and cut into squares.
