HUMMINGBIRD CAKE 
2 to 3 c. plain flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
3 eggs
1 1/2 c. vegetable oil
1 1/2 tsp. vanilla extract
1 tsp. cinnamon
1 (8 oz.) can crushed pineapple
2 c. chopped nuts
2 c. chopped bananas

Sift dry ingredients together. Stir in eggs and vegetable oil. Add all other ingredients and stir until mixed. Do not beat. Pour into a greased and floured tube pan.

Bake at 350°F for 1 hour and 10 minutes. Cool in pan.

Frosting:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 tsp. vanilla extract
1 box confectioners sugar

Have butter and cream cheese at room temperature. Mix all ingredients together. Beat until smooth and spread on cake.
