KUSHERIE 
SAUCE:

1 (6 oz.) can tomato paste
1 qt. cut up tomatoes
1 green pepper, chopped
Chopped celery leaves
1 tbsp. sugar
1/2 tsp. salt
1 tsp. cumin
1/4 tsp. cayenne pepper

In a separate saucepan combine above ingredients. Bring to boiling, reduce heat, and simmer 20-30 minutes. Serve sauce over rice and lentils and top with "browned onions".

BROWNED ONIONS:

Heat in a small skillet 2 tbsp. oil. Add 3 sliced onions and 4 cloves of minced garlic.

This is a convenient dish to fix when you have not laid anything out to thaw. From start to finish it takes about 45 minutes to prepare. I like it with plain yogurt. Similar to spaghetti, it's a meal in itself, and contains high-quality protein. Serves 6-8.
