BREAKFAST CASSEROLE 
2 tbsp. butter
2 c. cheese (American, cheddar, Swiss or combination)
12 eggs
Salt & pepper to taste
12-16 oz. breakfast sausage, sliced & fried
4 oz. can mushrooms, drained
2/3 c. half and half

Spread butter in 9"x13" pan. Shred cheese and sprinkle half over the butter. Break eggs on top of cheese, poke the yolks, but do not stir. Sprinkle eggs with sausage. Sprinkle mushrooms over sausage. Pour half and half over casserole. Top with remaining cheese. Sprinkle with paprika. Bake for 30 minutes at 350 degrees until golden brown. Let stand 5 minutes, then cut in squares.
