APPLESAUCE FRUITCAKE | |
1 can applesauce 1 box brown sugar 1/2 box golden raisins 2 c. English walnuts 2 c. pecans, chopped 1/2 lb. butter, room temp. 3 eggs, room temp. 1 tsp. cake spice 3 c. self-rising flour 1/2 lb. cherries 1/2 lb. pineapple Chop nuts and fruit and add to 1/2 cup flour; set aside. Have butter at room temperature, cream butter and brown sugar. Add eggs, one at a time; beat well. Add applesauce and cake spice. Add 2 1/2 cups flour; mix well. Add nuts and fruit; mix with hands. Cook in tube pan at 250 degrees for 2 1/2 to 3 hours on middle rack. Put pan of water on bottom rack. Wrap in heavy tin foil and let set several days. |
