RAISIN WALNUT BRAN MUFFINS 
2 1/4 c. oat bran
1/3 c. raisins
1/3 c. chopped walnuts
2 tsp. baking powder
3/4 c. skim milk
2 beaten eggs
1/4 c. honey
2 tbsp. vegetable oil

Heat oven to 425 degrees. In a large bowl, combine bran, raisins, walnuts, baking powder, and salt. Add remaining ingredients and mix only until dry ingredients are moistened. Do not over mix. Evenly divide mixture among 12 paper-lined cups in a muffin tin. Bake for 15 minutes or until the muffins are golden brown on top. Let cool and then serve.
