NOODLES WITH MUSHROOM MEAT SAUCE 
3 oz. wide noodles
1 med. onion, thinly sliced
1 1/2 tbsp. butter
1/2 lb. ground or chopped beef
1/4 lb. canned or fresh mushrooms
1 c. meat stock (1/2 c. tomato sauce or catsup)
1 1/2 tbsp. flour
2 1/2 tbsp. cold water
1/2 tsp. salt
Dash pepper
Speck cayenne

Cook noodles and drain. In the meantime, brown onion in butter in skillet, push onion aside and add mushrooms which have been washed and cut in fourths and saute for 5 minutes covered, add beef and cook all together for 5 minutes, then add meat stock using canned bouillon or meat extract, when boiling thicken with flour and cold water made into a paste, add salt, pepper and cayenne and simmer for 15 minutes. Stir occasionally, add noodles and tomato catsup and heat thoroughly. Serves 4.
