OVEN BARBEQUE BEEF | |
3 1/2 lb. chuck roast 2 tbsp. solid shortening 2/3 c. ketchup 1/2 c. brown sugar 1/4 c. lemon juice 1/4 c. water 1 tsp. hot sauce 1 tsp. dill weed 1 garlic clove, minced 1/4 c. chopped onion 1 1/2 tsp. salt 1/4 tsp. pepper 1/2 tsp. dry mustard Melt shortening in Dutch oven and brown meat. Combine remaining ingredients and pour over beef. Cover. Bake 2 hours at 350 degrees. Remove cover and bake 1 hour longer or until tender. Baste frequently. Skim fat when done. |
