CHEESE & SPINACH PIE 
2/3 c. chopped onion
2 tbsp. butter
1/2 lb. sliced cheese (Velveeta)
2 (15 oz.) cans cooked spinach, drained
6 eggs, beaten
Milk (add enough milk to eggs to make 2 c. liquid)
2 (9") frozen pie shells

1. Cook onion in butter until tender.

2. Lay cheese in shells, then spinach and onion.

3. Pour egg and milk mixture in pie shells.

4. Bake at 400 degrees for 35 minutes. Knife inserted in center should come out clean. 1/6 slice meets CCFP requirements of meat equivalent and 1 vegetable for lunch or supper.
