CHILE VERDE 
1 lb. pork chops (cubed)
4 tbsp. flour
1 (16 oz.) can tomato sauce
1 (16 oz.) can stewed tomatoes
1 clove garlic (minced)
1 c. water
2 (4 oz.) cans green chiles

Cube pork, removing fat. Cook until brown. Add garlic and cook until pork is done. Add flour to pan, stirring to absorb juices. Add water making a semi- thick gravy. Add tomatoes and chiles and simmer for 30 to 40 minutes. Optional, add 1/2 cup of wine. For extra flavor, saute onions with meat. Good plain or on rice. Best served with tortillas with grated cheese, lettuce, sour cream. Serves 6.
