HUCKLEBERRY CAKE | |
1 1/2 c. cake flour 2/3 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1/3 c. milk 1 egg 3 tbsp. butter, melted 1 tsp. vanilla or almond extract 1 1/2 c. fresh or partially thawed blueberries In large bowl, stir together flour, sugar, baking powder and salt. In small bowl, beat together egg, milk, butter and vanilla. Stir milk mixture into flour mixture until dry ingredients are moistened. Stir in berries. Bake in greased 8x8x2 inch cake pan. Bake 400 degrees 40 minutes or until pick comes out clean. Cool on rack. Dust with confectioners' sugar. |
