HUCKLEBERRY MUFFINS 
2 c. Bisquick
1/2 c. sugar
2 tbsp. grated orange rind
1 egg, slightly beaten
3/4 c. orange juice
2/3 c. huckleberries

Combine biscuit mix, sugar and orange rind. Add egg and orange juice; mix lightly. Add huckleberries; stir just until all ingredients are moistened. Fill greased muffin tins 3/4 full. Bake at 425 degrees for about 15 minutes. Yield: 1 dozen medium-sized muffins.

NOTE: Use fresh huckleberries or partially thawed frozen berries or well- drained canned berries.
