SHENANDOAH VALLEY APPLE CAKE 
1 c. cooking oil
2 c. sugar
3 eggs
1 1/4 tsp. vanilla
2 c. sifted flour
1 tsp. salt
1 tsp. baking soda
3 c. diced, pared apples
1 c. chopped walnuts
1 tbsp. flour

Beat together oil, sugar, eggs and vanilla, about 3 minutes. Sift together flour, salt and soda; add. Beat well. Mix walnuts with 1 tablespoon flour. Stir in apples and walnuts. Pour into greased and floured 13 x 9 x 2 inch pan. Bake at 350 degrees for an hour. Frost with caramel topping. Punch holes in warm cake with fork. Pour over and spread topping to cover cake.

CARAMEL TOPPING:

1/2 c. butter
1 c. brown sugar
1/4 c. milk

Boil 3 minutes.
