LOW CAL STEW | |
2 lbs. round stew 2 tbsp. butter 1 tbsp. sugar 1 1/2 tsp. salt 1 lb. carrots 1 bunch celery 1 (#303) can tomatoes 1 (12 oz.) can V-8 juice 1 (10 oz.) can beef consomme 2 med. potatoes, sliced 1 med. onion, chopped 1 clove garlic, diced Trim all fat from meat; cube to bite size. Melt butter and sugar in large pot. Add meat and brown well. Add 3 cups water and salt. Cook until meat is tender. Add carrots, celery and onions, tomatoes, V-8 juice and consomme. More water may be added, if necessary. Cook over low heat until vegetables are tender. Yield: 12 servings. |
