ISLANDER FISH FILLETS | |
1 lb. fish fillets 1/2 c. plain nonfat yogurt 2 tbsp. orange juice concentrate 1 tbsp. lemon juice 2 tsp. orange marmalade 1/3 c. mashed bananas 1/8 tsp. garlic powder 1/2 tsp. ginger Preheat oven to 400 degrees. Cut fillets into 4-serving size pieces. Place side by side in baking dish large enough to hold fish in a single layer. In medium bowl, combine rest of ingredients. Pour half of mixture evenly over fish. Bake 5-15 minutes or until fish flakes. Remove fish from pan. Serve with remaining sauce. |
