PARTY MEATBALLS | |
4 lb. hamburger 2 lb. sausage 1/2 lb. finely grated Romano cheese 4 cloves garlic, finely chopped 10 slices very stale bread 4 tsp. oregano 2 tsp. basil 2 tsp. onion salt 1 tsp. crushed red pepper 2 qt. tomato sauce 1 1/2 c. olive oil Mix thoroughly all ingredients except bread, tomato sauce and olive oil. Dip bread in water, squeeze out excess water and break into small pieces. Add bread to other ingredients and mix in thoroughly. Make meatballs from mixture, about half the size of a golf ball. Heat olive oil in deep cast iron pan until very hot. Brown meatballs about 10 at a time, in hot oil, turning often. Divide meatballs evenly into 2 crock pots. Add 1 quart tomato sauce to each pot. Cook on lowest heat for about 12 hours or overnight. Makes about 100 meatballs. |
