FRESH APPLE CAKE 
1 1/4 c. salad oil
3 eggs, well beaten
2 c. sugar
1 c. chopped pecans

Combine in large bowl. Next peel, core and chop enough fresh apples to make 3 cups (3 or 4 medium apples).

In separate bowl, sift 3 or 4 times:

3 c. plain or cake flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

Add flour mixture to apple mixture. Stir well. Flavor with 2 teaspoons vanilla. Put into 3 large pans, grease pans and flour them. Start in cold oven and bake at 325 degrees for 45 minutes.

ICING:

1 stick butter
1 c. light brown sugar

Heat together over low flame, then add 1/4 to 1/2 cup canned cream and let come to a full boil. Remove from heat and cool, then add 1 teaspoon vanilla, last add 1 box powdered sugar and blend well.
