STIR-FRIED TURKEY AND RICE 
1 tbsp. soy sauce
1 c. diced cooked turkey
1/4 c. vegetable oil
1 c. uncooked rice (reg.)
2 c. chicken bouillon
1/4 c. sliced celery
1/4 c. green pepper, chopped
2 tbsp. onion, chopped
1 egg, beaten
1/2 c. shredded lettuce

In small bowl, place turkey. Pour soy sauce over; set aside.

Pour oil in skillet; add rice and fry over medium heat. Stir constantly, browning rice. Add chicken bouillon and turkey mixture. Cover, let simmer about 15 minutes. Stir in celery, green pepper and onion. Cook, uncovered for 5 minutes. In center, make space or well. Add egg, stir until set. Mix with rice. Stir in lettuce. Serve. Serves 6.
