ZUCCHINI ITALIANO 
1 med. zucchini (1/3 lb.)
1 tbsp. olive oil
1 sm. garlic clove
1/8 to 1/4 tsp. salt
1/4 tsp. oregano
2 tbsp. shredded Parmesan cheese

Slice zucchini 1/8 inch thick. Heat oil in 8 inch skillet. Add zucchini, salt, oregano. Stir fry over medium heat. Add Parmesan cheese. Cover briefly to melt cheese. Serve.
