IMPOSSIBLE COCONUT PIE 
2 c. milk
3/4 c. sugar
1/2 c. Bisquick
4 eggs
1 1/2 tsp. vanilla
1 c. coconut
1/4 c. butter, melted

Heat oven to 350 degrees. Lightly grease pie plate 9 x 1 1/4 or 1 x 1 1/2 inches. Place all ingredients in blender and mix on high speed for 15 seconds. Pour into pie plate. Bake until golden brown and knife inserted comes out clean, 50-55 minutes. Refrigerate remaining pie. For Lemon Pie, use 10 inch pie plate and add 1/4 cup lemon juice.
