CHEDDAR-DILL BREAD | |
2 c. sifted all-purpose flour 2 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1/4 c. butter 4 oz. shredded cheddar cheese 1 tbsp. grated onion 2 tsp. dried dill weed 3/4 c. milk 1 egg Preheat oven to 350 degrees. Grease loaf pan. This is a batter bread, hence no rising, but it must be mixed and baked quickly. Put sifted flour, salt, baking powder and sugar into a large bowl. Cut or blend chunks of butter into mixture until it resembles coarse crumbs. Add cheese, onion and dill to this mixture; toss well until cheese and onion are well coated with flour and cheese does not stick together in clumps. Beat egg in milk, add to flour mixture. Stir quickly until all dry ingredients are moist (use fork). DO NOT overmix. Pour into pan, spread evenly, bake 40 to 45 minutes. Remove, cool on wire rack. Serve warm or cool. Makes 1 loaf. |
