CARROT CAKE 
3 c. grated carrots
4 eggs
1 1/2 c. salad oil
2 c. white sugar
2 c. self-rising flour
1 c. black walnuts
1 tsp. vanilla
1/4 tsp. walnut extract
1 tsp. cinnamon

Mix all ingredients, except carrots and walnuts, until smooth. Then mix in carrots and walnuts. Bake in well greased tube pan at 350 degrees for 1 1/2 hours. Remove from oven. Pour over hot cake, uncooked glaze made of 1/2 cup buttermilk, 1 cup sugar, 1/2 teaspoon baking soda, and 1 tablespoons white corn syrup.
